Here are some egg-cellent recipes to enjoy this season!
1. Farm-Fresh Deviled Eggs with Herbs
A classic favorite with a fresh twist!
Ingredients:
6 farm-fresh eggs
¼ cup mayonnaise
1 tsp Dijon mustard
1 tsp apple cider vinegar
Salt & pepper to taste
Fresh chives and parsley, finely chopped
Directions:
Hard-boil the eggs, peel, and slice in half.
Remove yolks and mash them with mayonnaise, mustard, vinegar, salt, and pepper.
Spoon or pipe the mixture back into the egg whites.
Garnish with fresh herbs and serve chilled!
2. Spring Garden Frittata
A protein-packed dish loaded with seasonal veggies!
Ingredients:
8 farm-fresh eggs
½ cup milk
1 cup spinach
½ cup cherry tomatoes, halved
¼ cup green onions, chopped
½ cup feta cheese
Salt & pepper to taste
Directions:
Preheat oven to 375°F and grease a cast-iron skillet.
Whisk eggs, milk, salt, and pepper in a bowl.
Sauté spinach, tomatoes, and onions in the skillet.
Pour the egg mixture over the veggies, top with feta, and bake for 15-20 minutes until set.
3. Lemon Curd with Farm-Fresh Eggs
A sweet and tangy spread perfect for spring!
Ingredients:
4 egg yolks
¾ cup sugar
½ cup fresh lemon juice
Zest of 1 lemon
6 tbsp butter
Directions:
Whisk egg yolks and sugar in a saucepan over low heat.
Add lemon juice and zest, stirring continuously.
Once thickened, remove from heat and stir in butter.
Let cool and store in a jar—perfect for toast, scones, or yogurt!
